1cup(250 ml) apple juiceroom temperature
¼cup(60 g) buttermelted
Instructions
Preheat oven to 400°F (200°C). Butter muffin pan or line with paper liners.
For the streusel topping: stir together the flour sugar, oatmeal and salt in a small bowl. Cut the butter into cubes and rub it into the flour mixture until mixture is crumbly.
For the muffins: In a large mixing bowl, stir together both kinds of flour, baking powder, salt, spices and sugar. Fold in the apples.
In a medium sized bowl, whisk together the eggs, apple juice and melted butter. Pour the apple juice mixture into the flour mixture and stir to combine. Don’t overmix!
Spoon batter into the muffin cups, filling them two-thirds full. Spoon streusel topping over the muffins.
Bake for 5 minutes at 400°F (200°C) and then reduce the oven temperature to 350°F (170°C) without opening the oven and bake for another 10-12 minutes until a toothpick inserted into the center of a muffin comes out clean. Muffins will stay fresh tightly covered at room temperature for at least two days. Or they can be frozen for up to one month.
