So kannst du deine Bananenmuffins ganz nach deinem Geschmack mit weniger Fett, weniger Zucker oder gerne mit Dinkel machen.<\/p>\n\n\n\n<p>F\u00fcr ein karamellartiges Geschmackserlebnis kommen Butter und brauner Zucker in den Teig. Das, was wir in Amerika Muffins nennen, sind ein Fr\u00fchst\u00fcck, und Cupcakes, meist mit Toppings, sind eine Nachspeise.<\/p>\n\n\n\n<p>Amerikanische Muffins sind also etwas ges\u00fcnder und einfacher in der Zubereitung als eine Nachspeise.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Welche Bananen werden f\u00fcr Bananenmuffins ben\u00f6tigt?<\/h4>\n\n\n\n<p>Es werden sehr reife, zerdr\u00fcckte Bananen f\u00fcr Bananenmuffins verwendet \u2013 Bananenmuffins sind die beste Resteverwertung f\u00fcr die Bananen, die zu weich geworden sind zum pur essen.<\/p>\n\n\n\n<p>\u00dcberreife Bananen sind intensiver im Geschmack als gelbe Bananen und auch viel s\u00fc\u00dfer, weil im Reifungsprozess der Banane die St\u00e4rken in Zucker umgewandelt werden.<\/p>\n\n\n\n<p>Immer wenn wir \u00fcberreife Bananen haben, gebe ich sie samt Schale ins Gefrierfach. Ich habe die Methode ausprobiert und du kannst <a href=\"https:\/\/livingoncookies.com\/de\/warum-ueberreife-bananen-die-besten-fuers-backen-sind-und-ein-einfacher-trick-die-bananen-schnell-im-backofen-nachreifen-zu-lassen\/\">hier lesen wie man Bananen schnell im Backofen nachreifen l\u00e4sst.<\/a><\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Wie kann ich das Rezept umwandeln?<\/h4>\n\n\n\n<p>Du kannst ein bisschen mehr oder weniger Bananenmus in den Teig geben als das, was im Rezept steht. Wenn du mehr Bananen verwendest, dann solltest du unbedingt auf die Backzeit achten, die Muffins werden wahrscheinlich etwas l\u00e4nger im Ofen brauchen als sonst.<\/p>\n\n\n\n<p>Als Fl\u00fcssigkeit nehme ich gerne Buttermilch, denn die S\u00e4uere der Buttermilch mit dem Natron die Muffins flaumig und weich macht. Sie sind sehr gut auch nur mit wei\u00dfem Mehl. Wenn du reines Vollkornmehl verwenden m\u00f6chtest, f\u00fcge auch zus\u00e4tzlich 2-3 Essl\u00f6ffel Bananenp\u00fcree oder Buttermilch dem Teig hinzu.<\/p>\n\n\n\n<p>Obwohl die Bananenmuffins nicht zu s\u00fc\u00df sind, wollen viele mit weniger Zucker backen. Die Zuckermenge im Rezept kann man reduzieren, aber bitte maximal um die H\u00e4lfte.<\/p>\n\n\n\n<p>Im Rezept dient geschmolzene Butter als Fett. Wenn du keine Butter hast oder deine Bananenmuffins lieber mit \u00d6l machen willst, kannst du die Butter durch die gleiche Menge \u00d6l ersetzen. M\u00f6chtest du Muffins mit weniger Fett machen, kannst du die Menge der Butter halbieren und stattdessen mehr Buttermilch nehmen.<\/p>\n\n\n\n<p>Meine Muffins sind mit Waln\u00fcssen, und ich liebe die Kombination! Bananenmuffins kannst du gerne ohne N\u00fcsse oder mit Schokolade (Schokost\u00fcckchen, Schokotr\u00f6pfchen) backen.<\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter size-large\"><img decoding=\"async\" width=\"533\" height=\"800\" data-pin-description=\"Das Rezept f\u00fcr saftige Bananenmuffins ist unkompliziert und auch wandelbar. Die hohe Backtemperatur erm\u00f6glicht, dass die Muffins schnell aufgehen und sch\u00f6n hoch werden. Bei 12 St\u00fcck Muffins werden die Muffin-Formen ziemlich voll sein, aber trotzdem geht der Teig beim Backen nicht \u00fcber, sondern die Muffins schie\u00dfen in die H\u00f6he und werden gro\u00df. Quasi nach der amerikanischen Devise gr\u00f6\u00dfer = besser!<\/p>\n\n\n\n<p>Um kleinere Muffins zu backen, werden die Muffin-Vertiefungen zu Dreiviertel mit Teig bef\u00fcllt. Das Rezept ergibt dann 15-18 Muffins und die Backzeit muss reduziert werden.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Wie lange sind die Muffins haltbar? Wie kann ich sie aufbewahren?<\/h4>\n\n\n\n<p>Luftdicht verpackt (z.B. in einer Frischhaltedose) bei Zimmertemperatur bleiben die Muffins f\u00fcr zwei bis maximal drei Tage frisch. Am ersten Tag sind sie am fluffigsten. Sollten sie danach etwas fester geworden sein, k\u00f6nnen sie f\u00fcr 5-10 Sekunden in der Mikrowelle aufgew\u00e4rmt werden und dann schmecken sie wieder wie frisch gebacken.<\/p>\n\n\n\n<p>Bananenmuffins kann man in einer Frischhaltedose super einfrieren. Sie sollten dann innerhalb von zwei Monaten aufgebraucht werden. Bei Zimmertemperatur tauen sie relativ schnell auf. Als ich sie meinen Kindern gefroren f\u00fcr die Kindergarten- oder Schuljause mitgegeben habe, waren sie bis zur Jausenzeit aufgetaut. Zumindest hat sich kein Kind bei mir beschwert, dass es einen gefrorenen Muffin essen musste. \ud83d\ude09 Wenn du es eilig hast k\u00f6nnen die Muffins f\u00fcr 10-20 Sekunden in der Mikrowelle
