Laut Aufschrift, ist Wiener Puderzucker \u201eeine fein vermahlene und anschlie\u00dfend speziell gesiebte Zuckersorte, die sich durch ihre feine Struktur hervorragend f\u00fcr Rollfondant, Toppings und Buttercremen eignet\u201c. Hoffentlich hei\u00dft das, dass von nun an keine Pulverisierung des Staubzuckers f\u00fcr Buttercremen notwendig ist!<\/p>\n<p>Auf der Schachtel ist ein Rezept eines Toppings f\u00fcr Cupcakes und Muffins angef\u00fchrt. Unter den Zutaten daf\u00fcr ist Mascarpone genannt und deswegen wollte ich das Rezept sofort ausprobieren. Denn mir ist aufgefallen, dass in \u00f6sterreichischen Konditoreien oft eine Mascarponecreme als Topping auf die Cupcakes kommt. Nach so einem Rezept suche ich schon lange.<\/p>\n<p>Neben Mascarpone sind unter den Zutaten Schlagobers, Frischk\u00e4se (super!) und Puderzucker genannt. Diese Creme ist k\u00f6stlich! Du r\u00fchrst alle Zutaten einfach zusammen und hast das beste Cupcake Topping aller Zeiten. Mit einer leichten und cremigen Konsistenz, schmeckt es vorz\u00fcglich nach den beiden K\u00e4sesorten Mascarpone und Frischk\u00e4se. Es ist fluffig aber trotzdem stabil genug um mit einem Dressiersack gespritzt zu werden. Ich habe hier die klassischen Geschmackskombinationen gew\u00e4hlt, die am besten zur Mascarponecreme passen und habe ein Rezept von Martha Stewart gefunden. Ihre Cupcakes enthalten viele Eier (um die Biskotten nachzuahmen) und damit die Cupcakes nicht durchgeweicht werden, wenn der Espresso-Sirup dr\u00fcber getr\u00e4ufelt wird. Meiner Meinung nach hat sie mit diesem Rezept den Nagel auf den Kopf getroffen! Ich habe die Cupcakes nach ihrem Rezept gebacken, nur das Topping habe ich nach dem Rezept auf der Puderzuckerschachtel gemacht.<\/p>\n<p>Diese Cupcakes schmecken genau wie Tiramisu! Manche w\u00fcrden sogar sagen, <em>besser als<\/em> Tiramisu. In einer R\u00fchrsch\u00fcssel Eier, Eidotter und Feinkristallzucker mit einem Schneebesen leicht schlagen. Sch\u00fcssel \u00fcber ein Wasserbad mit k\u00f6chelndem Wasser stellen und weiter mit dem Schneebesen schlagen, bis sich der Zucker aufgel\u00f6st hat und die Mischung warm ist (ca. 5-6 Minuten). Sch\u00fcssel vom Wasserbad nehmen und mit einem elektrischem Mixer die Ei-Zucker Mischung solange schlagen, bis sie flaumig, hellgelb und sehr dick ist.<\/div><\/li><li id=\"wprm-recipe-4487-step-0-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Vanilleschote aus der Milchmischung nehmen und wegwerfen. Beim R\u00fchren, die Milchmischung in die Ei-Zucker-Mischung gie\u00dfen und zusammenr\u00fchren. Die Cupcakes 18-20 Minuten backen, bis sie in der Mitte durch sind und die R\u00e4nder leicht goldbraun sind. Mit einem Zahnstocher einige L\u00f6cher in die Cupcakes stechen. Mit einem Teel\u00f6ffel den Sirup mehrmals \u00fcber die Cupcakes tr\u00e4ufeln, bis der Sirup von den Cupcakes aufgesogen ist. Ich habe meine Cupcakes dazu in den Muffinformen gelassen.
