M\u00e4rz 2019 aktualisiert.<\/em><\/p>\n<p>Cheesecake Cupcakes mit Beeren &amp; Schlag gibt es seit knapp 4 Jahren hier auf Living on Cookies und sie sind noch immer eines meiner Lieblingsrezepte. Auf besonderen Wunsch habe ich sie vor kurzem f\u00fcr eine Feier gebacken und der Gedanke, dass die Partyg\u00e4ste das Rezept suchen und die d\u00fcsteren, unscharfen Fotos von damals sehen werden, hat mich ziemlich besch\u00e4ftigt. Also habe ich dem Rezept eine rein kosmetische Versch\u00f6nerung mit frischen, hellen Fotos verpasst. Falls du auf die alten Fotos neugierig geworden bist, findest du sie ganz unten in diesem Beitrag. Das eine ist der Ausschnitt vom anderen. Schlimm. \ud83d\ude00<\/p>\n<p>Wie auch immer, nun zum Rezept!<\/p>\n<p><a href=\"https:\/\/livingoncookies.com\/wp-content\/uploads\/2015\/07\/IMG_9680ae.jpg\"><img decoding=\"async\" class=\"aligncenter size-full wp-image-3762\" src=\"https:\/\/livingoncookies.com\/wp-content\/uploads\/2015\/07\/IMG_9680ae.jpg\" alt=\"\" width=\"1200\" height=\"800\" \/><\/a>Cheesecake Cupcakes zu machen geht ganz einfach. Sie beeindrucken dennoch mit dem tollen Geschmack und Mundgef\u00fchl von einer Cheesecake. Sie schmecken ohne Topping hervorragend aber mit Schlag und Beeren darauf, sind sie etwas ganz Besonderes.<\/p>\n<p><a href=\"https:\/\/livingoncookies.com\/wp-content\/uploads\/2015\/07\/IMG_9703ae.jpg\"><img decoding=\"async\" class=\"aligncenter size-full wp-image-3763\" src=\"https:\/\/livingoncookies.com\/wp-content\/uploads\/2015\/07\/IMG_9703ae.jpg\" alt=\"\" width=\"533\" height=\"800\" \/><\/a>Die winzigen schwarzen Samen in der Cheesecake kommen von der Vanilleschote aus meinem hausgemachten <a href=\"http:\/\/livingoncookies.com\/de\/wie-mache-ich-vanilleextrakt\/\" target=\"_blank\" rel=\"noopener noreferrer\">Vanilleextrakt.<\/a> Man nehme ein Paar \u201eeingewachten\u201c Vanilleschoten aus dem Vanilleextrakt heraus, schneidet ein Ende ab und dr\u00fcckt die Samen samt Vanillepaste aus. Du kannst die Vanilleschoten im Extrakt mit Frischen ersetzen und so erneuerst du deinen Vanilleextrakt. Aber wenn du keine Vanilleschoten hast, keine Sorge, du kannst stattdessen Vanilleextrakt oder Vanillezucker verwenden.<\/p>\n<p><a href=\"https:\/\/livingoncookies.com\/wp-content\/uploads\/2015\/07\/IMG_9731ae.jpg\"><img decoding=\"async\" class=\"aligncenter size-full wp-image-3764\" src=\"https:\/\/livingoncookies.com\/wp-content\/uploads\/2015\/07\/IMG_9731ae.jpg\" alt=\"\" width=\"1200\" height=\"800\" \/><\/a>F\u00fcr das Beerenkompott kannst du jede beliebige Beerensorte nehmen, die du m\u00f6chtest, je nach Geschmack und Saison (tiefgefrorene sind genauso gut): Erdbeeren, Heidelbeeren, Himbeeren, Brombeeren, Ribisel\u2026 oder eine Mischung verschiedener Beeren. Es bleiben Beerenkompott und Schlag \u00fcber und ich finde sie sind die besten Toppings f\u00fcr Pancakes und Palatschinken.<\/p>\n<p><a href=\"https:\/\/livingoncookies.com\/wp-content\/uploads\/2015\/07\/IMG_9674ae.jpg\"><img decoding=\"async\" class=\"aligncenter size-full wp-image-3761\" src=\"https:\/\/livingoncookies.com\/wp-content\/uploads\/2015\/07\/IMG_9674ae.jpg\" alt=\"\" width=\"1200\" height=\"800\" \/><\/a>Das Rezept ist f\u00fcr genau zw\u00f6lf Cheesecake Cupcakes, die sehr schnell gebacken sind, aber gen\u00fcgend Zeit zum Ausk\u00fchlen brauchen. Wenn du die Cheesecake Cupcakes einige Stunden im K\u00fchlschrank k\u00fchlst, wird der Cheesecake fest und der Boden m\u00fcrb, damit du die Cupcakes leicht in der Hand halten und runterbei\u00dfen F\u00fcr den Boden, Kekse in der K\u00fcchenmaschine zerbr\u00f6seln. Butter in einer mittelgro\u00dfen Sch\u00fcssel in der Mikrowelle schmelzen. Br\u00f6sel dazugeben und gut durchr\u00fchren. Gib ca. einen Essl\u00f6ffel der Mischung in jede Form und dr\u00fccke die Masse (z.B. mit der glatten Unterseite eines Schnapsglases) fest hinein. In einer mittelgro\u00dfen Sch\u00fcssel Zucker und Mehl zusammenmischen. Auf niedriger Stufe, Zucker-Mehl-Mischung nach und nach in den Frischk\u00e4se r\u00fchren bis die Mischung glatt wird. Vanille dazugeben. Das Ei dazugeben und nur solange r\u00fchren bis eine homogene Masse entstanden ist. Nicht zu lange mischen. Jetzt l\u00f6ffelweise die Frischk\u00e4semischung auf den B\u00f6den verteilen. Die Cupcakes 19 Minuten lang backen, es kann sein, dass sie den Anschein nach l\u00e4nger gebacken werden m\u00fcssen aber das passt so, denn sie werden nach dem herausnehmen aus dem Ofen noch durch und sie werden beim Ausk\u00fchlen fester.
